Lefsa!
Making lefsa is one of our Christmas traditions. My middle daughter ( was really interested in the process this year. She ended up helping me with everything - rolling out the dough, moving it to the griddle, flipping on the griddle, taking it off when done and of course eating it!
Here we are all set to start:
I couldn't find the 'sock' for the rolling pin so had to improvise this year.
Here are the 2 'logs' of dough ready to divide up:
Here they are all rolled into the 24 'balls' for a single batch:
One on the griddle and another ready to roll out:
Ready to come off:
Whole pile (2 batches) all finished:
It is always really good but when I am done I remember (again) why we only do it once a year! I think there was 1/8" of flour over the entire kitchen by the time I was done...
Anyone else have any holiday traditions in your family?

My wife and kids bake candies and cookies and take them to everybody in the neighborhood. They have been doing it for years
